Ingredients

Dip
  • 1 10-oz package frozen chopped spinach 284 g
  • 1 16-oz container sour cream 454 g
  • 1 cup mayonnaise about 232 g
  • 1 1.4-oz packet Knorr Vegetable Recipe Mix 40 g; check allergens and current label
  • 1 8-oz can water chestnuts drained and finely chopped; about 142 g drained
  • 3 green onions about 45 g, thinly sliced

Equipment

  • Saucepan or microwave-safe bowl
  • Colander and clean towel
  • Mixing bowl and spoon
  • Knife and cutting board

Instructions

Prepare and chill
  1. Cook frozen chopped spinach according to its package directions, using a saucepan or microwave-safe bowl. Drain in a colander and allow to cool until safe to handle, about 10 minutes.
  2. Gather the cooled spinach in a clean towel and squeeze out as much liquid as possible. Loosen the compact spinach and chop any long pieces. Wet spinach will thin the dip.
  3. Stir sour cream, mayonnaise and vegetable recipe mix in the bowl. Fold in squeezed spinach, chopped water chestnuts and green onions until evenly distributed.
  4. Cover and refrigerate for at least 2 hours to soften the seasoning vegetables and develop flavor. Stir again, then serve cold with optional vegetable sticks or bread. Yield is about 4 cups, divided into sixteen roughly ¼-cup portions.

Notes

Storage and safety: Keep refrigerated at 40°F (4°C) or below. Use within 3 days. Set out small amounts and keep the rest chilled; discard dip held at room temperature for more than 2 hours, or 1 hour above 90°F (32°C). Contains milk and egg; the seasoning mix contains wheat and soy. Dippers are excluded.
Nutrition: Approximately 160 kcal per (about ¼ cup each) serving, calculated from the stated ingredient amounts and 16 equal portions. It is an estimate, not a measured analysis; brands, trimming, retained oil and serving sizes vary. Optional accompaniments are excluded.
Cost: Illustrative US grocery budget assumptions for the ingredient portions consumed: spinach $1.49, sour cream $2.29, mayonnaise $1.31, vegetable mix $1.89, water chestnuts $1.29, green onions $0.40. Calculated before rounding, total US$8.66 for the whole recipe, about US$0.54 per serving. These are assumptions, not a store quote; tax, delivery and energy are excluded.
