Ingredients

Makes 2 side servings

¼ tsp (about 1.5 g) fine salt
1 tbsp (15 ml) low-sodium soy sauce
1 tbsp (15 ml) unseasoned rice vinegar
1 tsp (5 ml) toasted sesame oil
1 tsp (4 g) granulated sugar
1 tsp (about 3 g) toasted sesame seeds
1 scallion (about 10 g), thinly sliced

DISHORA / RECIPES

Set out your tools

Vegetable peeler or wide Y-peeler
Colander
Small mixing bowl
Whisk or fork
Kitchen shears (optional)

DISHORA / RECIPES

First, shave the ribbons

Scrub and dry the entire
cucumber. Shave lengthwise into
long ribbons with a vegetable
peeler, turning as you work.
If the last strip at the seedy core
becomes too soft, stop peeling
and slice that remaining cucumber
thinly. Use it too, so the whole
cucumber goes in.
