Ingredients

Salad
  • 1 3.4-oz package pistachio instant pudding mix 96 g dry mix; use instant, not cook-and-serve
  • 1 20-oz can crushed pineapple in juice 567 g including juice; do not drain
  • 1 cup miniature marshmallows about 50 g
  • 1/2 cup chopped pecans about 56 g; reserve 1 tablespoon for the top if desired
  • 1 8-oz tub frozen whipped topping 226 g, thawed in the refrigerator

Equipment

  • Large mixing bowl
  • Rubber spatula
  • Measuring cups
  • Covered serving bowl

Instructions

  1. In a large bowl, stir the dry instant pistachio pudding mix into the whole can of crushed pineapple and its juice until no dry streaks remain. Do not add the milk called for on the pudding box.
  2. Fold in the miniature marshmallows and chopped pecans, reserving a tablespoon of pecans for the top only if you want a visible garnish.
  3. Add the thawed whipped topping in two additions, folding gently until the mixture is evenly pale green and fluffy. Avoid beating it hard.
  4. Cover and refrigerate at 40°F (4°C) or below for at least 1 hour. Spoon into 12 small dessert bowls or serve from one chilled bowl. Scatter any reserved pecans on top immediately before serving.

Notes

Ingredient choice: Use 3.4 oz regular pistachio instant pudding powder and a 20-oz can of crushed pineapple with its juice. Do not prepare the pudding separately and do not add milk. A smaller sugar-free box or cooked pudding changes the balance.
Allergens: The referenced Jell-O regular pistachio instant pudding label lists almond and pistachio; pecans are also in this recipe. The referenced Cool Whip Original label lists milk. Check the exact packages used, especially for guests with allergies.
Storage: Thaw topping in the refrigerator. Keep the finished salad covered at 40°F (4°C) or below and serve within 2 days for its best fluffy texture. Refrigerate within 2 hours of serving, or within 1 hour above 90°F (32°C); discard if held out longer.
Nutrition: Approximate per twelfth of the batch using regular instant pudding, undrained pineapple, mini marshmallows, pecans and the referenced whipped topping label. Brands, drained weight and scoop size change values.
Cost: Illustrative US$7.50 from one pudding box US$1.50, one pineapple can US$1.50, 50 g marshmallows US$0.70, 56 g pecans US$1.40 and one 8-oz whipped topping tub US$2.40. Excludes tax, delivery and energy.
