Ingredients
Soup
- 600 g Yukon Gold potatoes about 1 1/3 lb, peeled and cut in 1-inch pieces
- 300 g leeks white and light green parts only, sliced, rinsed well and drained
- 150 g yellow onion about 1 medium, chopped
- 2 tablespoons unsalted butter 28 g
- 1 L unsalted chicken broth about 4 1/4 cups, plus a little extra to loosen after chilling if needed
- 1/2 teaspoon fine salt about 3 g, adjust after chilling
- 1/4 teaspoon ground white pepper or black pepper
- 120 ml heavy cream 1/2 cup
- 1 tablespoon finely chopped fresh chives about 3 g, for serving
Equipment
- Large heavy saucepan with lid
- Immersion blender or countertop blender
- Knife and cutting board
- Shallow covered containers for chilling
- Fine-mesh sieve, optional
Instructions
- Cut off the dark tops and root ends. Slice the white and pale green parts, then swish them in a bowl of cool water so grit falls away. Lift them out, rinse again if needed and drain.
- Melt the butter in a large heavy saucepan over medium-low heat. Add the leeks and onion. Cook 8–10 minutes, stirring, until soft but not browned.
- Add potatoes, broth, salt and white pepper. Bring to a gentle simmer, cover partly and cook 18–22 minutes, until a potato piece crushes easily with a fork. Remove from the heat.
- Blend in the saucepan with an immersion blender only until smooth. For a countertop blender, work in small batches, vent the lid and handle the hot soup carefully. Avoid prolonged blending, which can make potatoes gluey. Stir in the cream. Taste, then adjust the salt.
- Transfer the soup to shallow containers and let the steam subside briefly. Refrigerate within 2 hours of cooking, covered at 40°F (4°C) or below, until fully cold, about 4 hours. The soup will thicken; whisk in a little cold broth only if needed.
- Stir gently, ladle into six small bowls and scatter with the chopped chives. Serve chilled.

Notes
Potato texture: Stop blending as soon as the soup is smooth; overworking potato starch can make it gluey. A fine-mesh sieve is optional if you want a particularly even finish.
Cooling and storage: Transfer hot soup into shallow containers. Refrigerate within 2 hours of cooking, or within 1 hour when the room is above 90°F (32°C), at 40°F (4°C) or below. Keep chilled for up to 3–4 days. Do not leave the finished soup on a buffet at room temperature.
Nutrition: Approximate per sixth of the recipe from generic potato, leek, onion, butter and heavy cream data and an unsalted chicken broth label. Broth, cream and salt brands change sodium and calories. Bread is not included.
