Ingredients

Mousse
  • 400 g silken tofu about 14 oz; drain free liquid without pressing
  • 200 g dark chocolate about 7 oz, 60–70% cocoa, finely chopped; check dairy ingredients if needed
  • 2 tbsp pure maple syrup 42 g
  • 1 tsp vanilla extract
  • 1 pinch fine salt

Equipment

  • Blender or food processor
  • Heatproof bowl and microwave or saucepan
  • Spatula
  • Six small dessert cups

Instructions

Blend and chill
  1. Set out six cups. Drain free liquid from the silken tofu without pressing it. Blend the tofu alone until completely smooth, scraping down the sides as needed.
  2. Place chocolate in a dry heatproof bowl. Microwave in 20-second bursts, stirring between each, or set over gently simmering water without letting the bowl touch the water. Stop once smooth. Let it cool briefly until warm and fluid, not hot or starting to set.
  3. Add melted chocolate, maple syrup, vanilla and salt to the smooth tofu. Blend thoroughly, scraping down the sides, until there are no visible pale tofu specks. If needed, pause and scrape again; do not add unmeasured water.
  4. Divide evenly among six cups, cover and refrigerate for at least 2 hours, until thick and spoonable. Serve chilled. This method makes a dense chocolate pot rather than an airy whipped mousse.

Notes

Storage and safety: Refrigerate at 40°F (4°C) or below and use within 3 days, or sooner if the opened tofu package directs. Keep room-temperature time below 2 hours, or 1 hour above 90°F (32°C). Contains soy; chocolate may contain milk or carry cross-contact warnings.
Nutrition: Approximately 250 kcal per small dessert cups serving, calculated from the stated ingredient amounts and 6 equal portions. It is an estimate, not a measured analysis; brands, trimming, retained oil and serving sizes vary. Optional accompaniments are excluded.
Cost: Illustrative US grocery budget assumptions for the ingredient portions consumed: silken tofu $2.85, dark chocolate $5.00, maple syrup $0.84, vanilla $0.34, salt $0.01.
