Ingredients

Protein balls
  • 1 cup creamy peanut butter about 256 g; stir if separated
  • 1/4 cup honey about 84 g
  • 1 tsp vanilla extract
  • 1 cup old-fashioned rolled oats about 80 g
  • 1/3 cup vanilla protein powder about 30 g; check the package's scoop weight
  • 1/4 cup mini chocolate chips about 43 g
  • 1 pinch fine salt
  • 0–2 tsp water only if the rested dough is crumbly

Instructions

Mix and chill
  1. Stir peanut butter, honey, and vanilla in a medium bowl until smooth.
  2. Add oats, protein powder, mini chocolate chips, and salt. Mix until evenly coated. Rest 5 minutes so the oats hydrate.
  3. Squeeze a spoonful; it should hold together. If crumbly, work in water one teaspoon at a time. If sticky, chill briefly before rolling.
  4. Scoop and roll into 16 even balls. Chill in a covered container for about 30 minutes, until firm.

Notes

The companion Home & Kind video shows milled flaxseed; this measured card uses vanilla protein powder. Protein powders vary in absorbency and nutrition; adjust water by feel and recalculate if changing brands. Keep covered at 40°F or below; chill promptly and use within 3 to 4 days or freeze for longer storage. Contains peanuts; check the powder and chips for other allergens. Nutrition is an estimate per one of 16 balls.
