Ingredients

Parmentier potatoes
  • 2 lb Yukon Gold potatoes peeled or scrubbed, cut into ¾-inch cubes
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter melted
  • 1 tsp fine salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh rosemary finely chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh parsley chopped

Instructions

Roast the potatoes with garlic and rosemary
  1. Heat oven to 425°F (220°C), placing a rimmed sheet pan inside. Parboil the potato cubes in salted water for 5 minutes. Drain well and let steam-dry for 5 minutes.
  2. Toss the dry potatoes with olive oil, melted butter, salt, and pepper. Carefully spread them on the hot pan in one layer. Roast 30–35 minutes, turning after 20 minutes, until golden and tender.
  3. Toss with rosemary and garlic for the final 5 minutes so they become fragrant without burning. Finish with parsley and serve hot.

Notes

Drying after parboiling helps the edges brown. Add garlic and rosemary near the end to keep their flavor fresh. Cost and nutrition are estimates.
