Total Time 6 hours 10 minutes
Servings: 2 jars
Course: Breakfast

Ingredients

Two jars
  • 1 cup old-fashioned rolled oats
  • 2 tbsp chia seeds
  • 1 cup unsweetened soy milk
  • 2 tsp maple syrup
  • ½ tsp vanilla extract

Equipment

  • 2 12-ounce lidded jars Wide-mouth jars are easiest to stir
  • 1 Spoon For stirring
  • 1 set Measuring cups For oats and milk
  • 1 set Measuring spoons For chia, maple and vanilla

Instructions

Prepare and chill
  1. Divide 1 cup old-fashioned rolled oats and 2 tablespoons chia seeds evenly between two 12-ounce lidded jars.
  2. Pour ½ cup soy milk, 1 teaspoon maple syrup and ¼ teaspoon vanilla extract into each jar. Stir thoroughly, scraping the bottom so no dry oats or chia remain.
  3. Close the lids and refrigerate for at least 6 hours or overnight, until the oats are tender and the mixture is thick.
  4. Stir each jar in the morning. Add a splash of soy milk if needed, then top with fresh fruit just before eating, if desired.

Notes

Use old-fashioned rolled oats, not steel-cut oats, for the stated overnight timing. Chill at least 6 hours and keep refrigerated for up to 3 days; add fresh fruit at serving time. Contains soy; check oat packaging for gluten cross-contact if needed. The approximate $2.00 batch cost excludes optional fruit. The cookingforpeanuts video was originally uploaded September 5, 2022 and shows the same oats-to-milk base ratio.
