Ingredients
- 1 1/2 cups graham cracker crumbs 150 g
- 2 tablespoons granulated sugar 25 g
- 6 tablespoons unsalted butter 85 g; melted
- 4 large egg yolks 68 g
- 1 14-ounce can sweetened condensed milk 397 g; not evaporated milk
- 1/2 cup Key lime juice 120 mL; bottled or freshly squeezed
- 1 tablespoon finely grated lime zest 6 g; green peel only
Equipment
- 9-inch pie plate
- Mixing bowls
- Whisk
- Measuring cups and spoons
- Microplane or fine grater
- Food thermometer
- Wire rack
Instructions
- Heat the oven to 350°F (175°C). Set a 9-inch pie plate on a stable work surface and combine the graham cracker crumbs, sugar and melted butter in a bowl until evenly moistened.
- Press the crumb mixture firmly across the base and up the sides of the 9-inch pie plate. Bake for 8 minutes, then set aside while preparing the filling. Keep the oven at 350°F (175°C).
- Reserve a pinch of the measured zest for the finished pie. Whisk the yolks until smooth, then whisk in the sweetened condensed milk, Key lime juice and remaining zest until fully combined. Pour into the warm prebaked crust.
- Bake for about 18–22 minutes until the edges are set and the center has a small, gentle wobble. Check that the center reaches 160°F (71°C) with a food thermometer; continue baking if necessary. Avoid a rolling, liquid center.
- Cool on a wire rack for about 1 hour, then refrigerate promptly at 40°F (4°C) or colder for at least 4 hours. Do not leave out longer than 2 hours in total. Scatter the reserved zest over the chilled filling and cut into 8 slices.

Notes
Estimated nutrition is for one of 8 slices without toppings. The filling is naturally pale yellow; no coloring is needed. Regular lime juice may replace Key lime juice in the same quantity, with a different flavor. Use sweetened condensed milk, not evaporated milk. Bake the egg filling to 160°F (71°C), refrigerate promptly and use within 3–4 days. Total time includes about 1 hour cooling and at least 4 hours chilling.
