Ingredients

Yogurt centers
  • 1 cup plain whole-milk Greek yogurt 240 g; thick, not drinkable yogurt
  • 1 cup fresh strawberries 150 g after hulling, cut into 1/4-inch pieces
  • 1 tablespoon honey 21 g
  • 1 teaspoon vanilla extract 5 ml
Chocolate shell
  • 1 cup semisweet chocolate chips 170 g
  • 1 tablespoon coconut oil 14 g

Equipment

  • Freezer-safe baking sheet and parchment paper
  • Mixing bowl
  • Small deep microwave-safe bowl
  • Measuring cups and spoons
  • Fork and spoon
  • Knife, cutting board and clean towel

Instructions

  1. Line a freezer-safe baking sheet with parchment. Rinse strawberries under running water, pat very dry, hull and cut into 1/4-inch pieces.
  2. Stir the Greek yogurt, honey and vanilla in a mixing bowl. Fold in the measured strawberries. Spoon into 12 equal mounds on the lined tray, about 2 heaped tablespoons each, leaving space between them. Flatten slightly to make dipping easier.
  3. Freeze the tray flat for at least 3 hours, or longer until every center is completely firm and lifts cleanly from the parchment without bending. Timing depends on the freezer and mound thickness.
  4. Put chocolate chips and coconut oil in a small, deep, completely dry microwave-safe bowl. Heat in 20-second bursts, stirring thoroughly between each, until almost melted; stir until smooth. Allow to cool briefly so it is fluid but not hot.
  5. Remove only 3 or 4 frozen centers at a time. Lower each into the chocolate with a fork and use a spoon to cover the top. Lift, let excess drip back into the bowl and slide onto the parchment. Work quickly. If a center softens, return it to the freezer; if chocolate thickens, rewarm it in a brief 5–10-second burst and stir.
  6. Freeze the coated clusters for about 10 minutes, until the shell is firm. Before eating, let individual portions soften at room temperature for 5–10 minutes, checking sooner in a warm kitchen. Store the rest frozen in an airtight container, with parchment between layers, for up to 2 weeks for best texture.

Notes

Texture and storage: These are frozen treats, not soft refrigerated cheesecake bites. Whole-milk Greek yogurt gives a richer center than nonfat yogurt. Serve after a brief softening period, keep the remaining batch frozen and avoid repeated thawing and refreezing. Contains milk; some chocolate also contains soy. Check ingredient labels for allergies.
Nutrition: Estimated per one of 12 equal clusters from the stated quantities, representative whole-milk Greek yogurt and semisweet chocolate labels, and standard fruit, honey, vanilla and coconut-oil values. All the coating is counted even though a little may remain in the bowl. Brands and portion size vary.
Cost: Illustrative US grocery-budget assumptions, not a store quote: yogurt $4.48/907 g × 240 g, strawberries $2.98/454 g × 150 g, chocolate $3.24/340 g × 170 g, honey $3.98/340 g × 21 g, vanilla $4.48/59 ml × 5 ml, coconut oil $5.48/414 g × 14 g. Calculated before rounding: about US$4.60 for 12 clusters or US$0.38 each. Excludes tax, delivery, equipment and energy.
Video: MsVegan demonstrates the same mix, freeze and chocolate-dip method. The video uses non-dairy vanilla yogurt, maple syrup, larger portions and more chocolate; this recipe uses plain dairy Greek yogurt, honey, vanilla and smaller clusters. Follow this card’s amounts and freezing cues.
