Ingredients
- 12 oz dry penne pasta 340 g; cooked in unsalted water
- 24 oz cherry tomatoes 680 g, rinsed and dried
- 8 oz feta cheese 227 g block, drained
- 3 tablespoons extra-virgin olive oil divided
- 3 cloves garlic peeled and roughly chopped
- ¼ teaspoon black pepper
- ¼ cup fresh basil leaves lightly packed, about 6 g; torn
- ½ cup reserved pasta cooking water reserve before draining; add only as needed
Equipment
- 9 × 13-inch oven-safe baking dish
- Large pasta pot and colander
- Heatproof measuring cup for reserving pasta water
- Wooden spoon, knife and cutting board
- Oven mitts
Instructions
- Heat the oven to 400°F (200°C). In a 9 × 13-inch oven-safe baking dish, toss the cherry tomatoes and roughly chopped garlic with 2 tablespoons olive oil and the black pepper. Tuck the garlic among the tomatoes rather than leaving it exposed on top.
- Nestle the drained feta block in the center of the tomatoes and drizzle the remaining 1 tablespoon olive oil over the cheese. Bake on the middle rack for 30–35 minutes, until the tomatoes have split and released juice and the feta is soft when pressed with a spoon. The cheese need not melt into a liquid.
- Meanwhile, bring a large pot of unsalted water to a boil. Time the pasta so it finishes near the end of roasting. Cook the penne according to the package directions until al dente. Before draining, scoop out ½ cup pasta water into a heatproof measuring cup. Drain the pasta without rinsing.
- Use oven mitts to set the hot baking dish on a heatproof surface. Mash the softened feta and tomatoes with a wooden spoon, keeping clear of hot tomato juices. Stir in 2 tablespoons of the reserved pasta water to start, until the mixture becomes a creamy, slightly textured sauce.
- Fold in the hot penne and torn basil. Toss thoroughly, adding more reserved pasta water 1 tablespoon at a time only if needed, until the sauce coats the pasta. Serve immediately in four equal portions.

Notes
Texture: Feta softens but does not stretch like mozzarella. Mash it thoroughly with the tomato juices before adding the pasta. Use cooking water gradually.
Storage: Refrigerate in shallow containers within 2 hours, or within 1 hour above 90°F. Keep at 40°F or below for 3–4 days. Reheat with a splash of water until the center reaches 165°F.
Nutrition: Estimated per one-quarter recipe using representative penne and feta labels and produce data. Includes all olive oil, no added salt and no side dishes. Brand differences affect sodium and other values. Contains milk and wheat.
Estimated cost: About US$14.60 for the recipe, or US$3.65 per serving, using prorated ingredient quantities. Prices vary by store and season; excludes equipment, energy, taxes and delivery.
