Ingredients

Cake
  • 3 cups all-purpose flour 360 g; spooned and leveled if not weighing
  • 1 cup granulated sugar 200 g
  • 1 tbsp baking powder 12 g
  • 1/2 tsp fine salt 3 g
  • 1 cup whole milk 240 mL
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup unsalted butter 113 g, melted and cooled until just warm
  • 3 cups peeled and cored apples 360 g prepared; cut into 1/4-inch dice; Granny Smith or Honeycrisp
Cinnamon swirl
  • 1/2 cup packed light brown sugar 110 g
  • 2 tsp ground cinnamon
Glaze
  • 1 cup powdered sugar 120 g
  • 2 tbsp whole milk 30 mL

Equipment

  • 9-by-13-inch metal baking pan lined with parchment
  • Mixing bowls two medium and one small; reuse the small bowl for glaze
  • Whisk and silicone spatula
  • Measuring cups and spoons
  • Peeler, knife and cutting board
  • Wire cooling rack
  • Toothpick or thin skewer for checking doneness

Instructions

  1. Heat the oven to 350°F (175°C). Line a 9-by-13-inch metal baking pan with parchment, covering the bottom and sides.
  2. In a large bowl, whisk the flour, granulated sugar, baking powder and salt. In a second bowl, whisk the 1 cup milk, eggs, vanilla and melted butter until blended. The butter should be warm, not hot.
  3. Pour the wet mixture into the dry ingredients and fold with a spatula just until the flour disappears. Fold in the small-diced apples. The batter will be thick and spreadable; avoid beating it smooth.
  4. Stir the brown sugar and cinnamon together in a small bowl. Spread half the batter in the lined pan. Scatter half the cinnamon sugar over it, then gently spread on the remaining batter and sprinkle with the remaining cinnamon sugar. Draw a butter knife through the batter in a few wide curves, without scraping the parchment.
  5. Bake on the center rack for 40–45 minutes. The top should be golden and a toothpick inserted into cake near the center, avoiding an apple piece, should show a few moist crumbs but no liquid batter. If needed, bake in 5-minute increments and check again.
  6. Set the pan on a wire rack and cool for 20 minutes. Whisk the powdered sugar and 2 tablespoons milk in the cleaned small bowl until smooth. Drizzle over the warm cake. Let the glaze settle before cutting into 12 squares; cool longer for neater slices.

Notes

Apple size: Weigh or measure after peeling and coring. Keep pieces close to 1/4 inch so they soften evenly.
Storage: Cool completely, cover and refrigerate for up to 4 days. Freeze individual squares for longer storage, preferably without glaze, and thaw in the refrigerator.
Nutrition: Approximate values for one of 12 equal squares, including all glaze. Values are calculated from representative ingredient data, not laboratory analysis. Brands and portion sizes change the result.
Estimated cost: About $5 for the whole cake, or $0.42 per square, in USD. Based on prorated budget-store ingredient prices; excludes parchment, energy, tax and delivery. Local prices vary.
